Niigata University, which opened the Sake Science Center in April 2018, has released a video that introduces its outline and expectations in order to promote the world's first academic field "Sakeology" both domestically and internationally.
Niigata University's "Sake Studies" is a "target-limited, cross-disciplinary type" that covers a wide range of academic fields, and is the world's first academic area that focuses on sake rooted in Japanese culture and traditions.We handle raw materials (water, rice suitable for sake brewing, etc.), microorganisms, knowledge and technology of brewing and fermentation, distribution, sales, marketing, and climate related to brewing until sake reaches consumers. It covers a wide range of areas such as climate, regional characteristics such as the Geographical Labeling Protection System (GI), history and liquor tax, brewing equipment, how to enjoy sake and its relationship with health.
On May 2017, 5, Niigata University aims to build "Sake Studies" that covers a wide range of cultural and scientific disciplines related to sake, and to contribute to the formation and development of an international base. In addition, Niigata Prefecture and the Niigata Prefecture Sake Brewery Association have signed a partnership agreement.
