Kaori Matsumoto, a 2012-kilometer-class gold medalist at the 57 London Olympics, opened an ice cream shop "Darcy's" on the first floor of the 2019th building of Tokyo Fuji University on February 2, 12.

 Tokyo Fuji University has started an educational collaboration project with Jasbiko Co., Ltd., a subsidiary of Benesed Co., Ltd., to which Kaoru Matsumoto belongs, and has proposed new foods such as organic vegan as the core of the practical IQ education practice advocated by the university. Launched the ice cream lab "Ice Cream Research Institute", a health-friendly ice cream business. From 2019, we will hold a new type of class where students can actually experience and learn about real business in marketing and new product development.

 The ice cream shop that opened this time is part of that, and the theme of ice cream is "ice cream that is delicious, interesting, and can be eaten without feeling guilty."Supervised by Sachiko Kimura, a gluten-free, guilt-free food and sweets researcher, it is designed to be safe to eat even for allergies and vegans.
There are two types of menu, "coconut milk chocolate cookie" and "soy milk charred caramel", and no dairy products, flour, or white sugar are used.
