Kyoritsu Women's University worked on devising a school lunch menu using ingredients from Minamisanriku Town in a seminar (graduation thesis) by Professor Ikiko Kinoshita, Department of Food and Nutrition, Faculty of Home Economics, as part of the social and regional cooperation efforts in 2020.

 Kyoritsu Women's University / Junior College has comprehensive cooperation with local governments (Chiyoda Ward, Fukui City, Higashiizu Town, Minamisanriku Town) for the purpose of contributing to education / academic research, regional / industrial promotion, and human resource development. Octopus, coho salmon, and Japanese mustard spinach, which are ingredients from Minamisanriku, are used for the lunch menu.We devised a meal menu of Minami Sanriku, which is the main dish "fried salmon potato batter", the side dish "komatsuna and paprika butter saute", the soup "octopus minestrone", and the staple food "bread".The student-designed lunch menu will be provided to seven elementary and junior high schools in Minamisanriku-cho on November 2020, 11.At that time, a food education video was also broadcast in which the students introduced the characteristics of ingredients in Minamisanriku and local production for local consumption.

 また、同日には、南三陸町立入谷小学校6年生(1クラス12名)と、共立女子大学をテレビ会議システムZoomで繋ぎ、プロジェクトに関わった学生3名と木下教授が児童たちからの質問に答えるなど食育交流も行った。南三陸町では、文科省推進のGIGAスクール構想で1人1台端末の取組を行い、11月には、小学校3年生以上には1人1台端末が実現し、当日も6年生児童全員、タブレットからオンライン食育に参加した。
