A research group led by Yasuyoshi Watanabe, director of the Health Science Innovation Center of Osaka City University, has devised 82 Japanese menu items that are effective in reducing fatigue.The recipe book "Eat deliciously and get rid of tiredness" (79 pages, 1,200 yen without tax) is coming soon and will be released by Maruzen Publishing.

 Following the UNESCO intangible cultural heritage registration of "Japanese food" in 2013, the Ministry of Agriculture, Forestry and Fisheries promotes interdisciplinary research including various fields from researchers to cooks in the fields of agriculture, medicine and nutrition, Japanese culture, etc. In order to do so, we formulated a research strategy called "evaluation of Japanese food in collaboration with medicine and nutrition" in 2014, and are conducting research on a nationwide scale.

 Osaka City University is conducting research with Hokkaido University and Tenshi University on the subject of "elucidation of the effects of Japanese food on improving stress and brain function," and this menu development is part of that.Director Watanabe and his colleagues used ingredients such as soybeans and bonito, which are rich in nutrients such as vitamin C and ornithine, which were found to be effective in relieving fatigue in past studies, along with Hiroshi Urakami, who runs a restaurant in Kitashinchi, Osaka. I thought of a menu that can be easily and deliciously made.By adding the knowledge of the chef who represents Japan, we were particular about not only the nutritional balance but also the deliciousness.

 We asked 20 men and women in their 60s and 24s to eat this anti-fatigue diet every dinner for 3 weeks, and after 3 weeks, we asked them to choose the level of fatigue on a 100-point scale, and the feeling of fatigue was eliminated by an average of 18%. ..Furthermore, the autonomic nervous function at rest and the effect of improving some blood components were also observed, and the anti-fatigue function could be proved.

 Despite the fact that nearly 40% of the population suffers from fatigue that lasts for more than half a year, there have been few full-scale studies on fatigue.The company plans to continue promoting and commercializing anti-fatigue foods in order to raise awareness of "Japanese food that contributes to health" supported by research results.
