A research group led by Assistant Professor Kentaro Murakami and Professor Satoshi Sasaki of the Graduate School of Medicine of the University of Tokyo interviewed Japanese adult men and women about their values, knowledge, and skills regarding food.  The research group sent a questionnaire to 2,231 adult Japanese men and women nationwide, asking about the value standards of food selection, nutritional knowledge, cooking skills, and general food skills.

 The results show that women place more emphasis on all value criteria for food selection, such as availability and safety, than men, as well as high knowledge, skills and skills. Elderly people aged 60 to 80 emphasize safety and organic food selection, while young people aged 19 to 39 and middle-aged people aged 40 to 59 emphasize availability, convenience, sensory appeal, and comfort.
