Shukutoku University has developed a lunch menu for local production for local consumption using vegetables from Miyoshi Town, Saitama Prefecture, which we are cooperating with.The completed menu will be offered at the Welfare Cafe Harmony adjacent to the Miyoshi Town Hall during November.
This initiative was carried out in collaboration with Shukutoku University and Miyoshi Town as part of the "Miyoshi Vegetable Branding Promotion" project aimed at improving the image of "Miyoshi Vegetables" and expanding consumption.In the menu making, the 4th grade of the Department of Nutrition, Faculty of Nursing and Nutrition, Shukutoku University uses vegetables from Miyoshi Town to increase health awareness, increase vegetable intake, and promote local production and local consumption to promote dietary education. I devised a lunch menu.
The first menu that was devised was "Fish and Vegetable Collaboration Lunch".Mainly tomato sauce of mekajiki and grilled vegetables, shredded cabbage and carrot soup, side dish and satoimo gratin. The second is "Chicken & Vegetable Karaage Donburi Lunch".Mainly fried chicken bowl with grated ponzu sauce, miso soup with mushrooms, side dish with persimmon and apple yogurt. The third is "Paprika meat-stuffed colorful lunch".Mainly stuffed with paprika meat, sweet potato soup, side dish with broccoli and hijiki cottage cheese.
The completed menu is offered at the welfare cafe harmony adjacent to the Miyoshi Town Hall for 2016 days in line with Saitama Prefecture's local production for local consumption month in November 11.In addition, the recipes for the menu have been distributed to all households in the town, and are also available on the Miyoshi Town website.It is said that this lunch menu initiative using "Miyoshi vegetables" will be handed over to the next 6th graders and will be carried out in 4 as well.
